Aunt Niecy's Chicken Lollipops
Ingredients:
- 12 chicken drumettes
- 1/2 cup all-purpose flour
- 1/2 cup bread crumbs
- 1/4 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon paprika
- Salt and pepper to taste
- 2 eggs, beaten
- Cooking oil for frying
- Wooden skewers or lollipop sticks
Instructions:

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

Carefully push the meat down to one end of each drumette to form a "lollipop" shape. Insert a wooden skewer or lollipop stick into the meat, pushing it all the way through to the bone.

In a shallow dish, mix together the flour, bread crumbs, Parmesan cheese, garlic powder, onion powder, paprika, salt, and pepper.

Dip each chicken lollipop into the beaten eggs, then coat with the bread crumb mixture, pressing gently to adhere.

Heat cooking oil in a large skillet over medium-high heat. Fry the chicken lollipops in batches for about 2-3 minutes per side, or until golden brown and crispy.

Transfer the fried chicken lollipops to the prepared baking sheet. Bake in the preheated oven for 15-20 minutes, or until cooked through and crispy.
