Uncle Ray's Potato Picnic Salad

Ingredients:

  • 5 pounds potatoes, peeled and diced
  • 1 cup mayonnaise
  • 1/4 cup mustard
  • 1/4 cup pickle relish
  • 1/2 cup chopped celery
  • 1/2 cup chopped onion
  • 4 hard-boiled eggs, chopped
  • Salt and pepper to taste
  • Paprika for garnish

Instructions:

  1. Boil the diced potatoes in a large pot of salted water until tender, about 10-15 minutes. Drain and let cool.

  2. In a large bowl, mix together the mayonnaise, mustard, pickle relish, celery, onion, and hard-boiled eggs.

  3. Add the cooled potatoes to the bowl and gently toss to combine. Season with salt and pepper to taste.

  4. Sprinkle paprika over the top for a colorful garnish.

  5. Chill in the refrigerator for at least an hour before serving to allow the flavors to meld together.

  6. Serve at your next picnic or family gathering, and watch it disappear!
