Uncle Ray's Potato Picnic Salad
Ingredients:
- 5 pounds potatoes, peeled and diced
- 1 cup mayonnaise
- 1/4 cup mustard
- 1/4 cup pickle relish
- 1/2 cup chopped celery
- 1/2 cup chopped onion
- 4 hard-boiled eggs, chopped
- Salt and pepper to taste
- Paprika for garnish
Instructions:

Boil the diced potatoes in a large pot of salted water until tender, about 10-15 minutes. Drain and let cool.

In a large bowl, mix together the mayonnaise, mustard, pickle relish, celery, onion, and hard-boiled eggs.

Add the cooled potatoes to the bowl and gently toss to combine. Season with salt and pepper to taste.

Sprinkle paprika over the top for a colorful garnish.

Chill in the refrigerator for at least an hour before serving to allow the flavors to meld together.
